Several of the bloggers I enjoy reading were at the Healthy Living Summit last weekend. Next year, I want to go! The idea of being with a couple hundred people who are all interested in fitness, nutrition, and healthy living (duh) really excites me. So, reading their posts about the event has inspired me to get to blogging.
That, and someone actually told me that they look forward to new posts. Hehe…
So, to be honest, I’ve had a hard day. Didn’t win the “Mother of the Year” award for today’s performance, that’s for sure. However, a little nugget of sunshine I had today came when I stumbled upon a U-Pick blueberry farm! Aaron and I picked a couple pints of blueberries and I can’t wait to use them to fix something tomorrow.
Speaking of blueberries, I recently found a recipe for a Cucumber Blueberry smoothie. I’ve made it twice and LOVE it. I read the recipe in my aunt’s Vegetarian Times magazine and couldn’t quite remember the exact ingredients…so I kind of made my own concoction:
1/2 cup frozen blueberries
1/2 a cucumber, peeled and de-seeded
1 cup of vanilla almond milk
A few ice cubes
Blend it really well until smooth and enjoy! 🙂
